Choose tasks before features

Write down the common service path and the exceptions that create the most delay: order edits, table transfers, takeaway, discounts or split payment. Ask each vendor to demonstrate those exact tasks.

A long feature list is less useful if a cashier cannot quickly find the correct menu item or a kitchen ticket is hard to read.

Include the people who will use it
